Call it a lack of foresight, but we don't have a lot of IP addresses free in the block allocated to our plesk servers. It shouldn't be necessary to need a new IP address for every domain that wants an SSL certificate.

It's not a Plesk limitation, it's an apache limitation. This cannot be avoided.

It is not an apache limitation, it's an SSL limitation. See http://httpd.apache.org/docs/2.0/ssl/ssl_faq.html#vhosts2 for more info.
