is there a quick and easy way to, all at once, change the dns records on all of my domains from ns1.xxx.com & ns2.xxx.com to ns1.yyy.com & ns2.yyy.com?

You can use /usr/local/psa/bin/dns.sh command line utility to manage dns records via our CLI. This would allow you to create a script which will go through all domains and remove / add needed records.
